As most of you know, I have been up and down with my weight for over 10 years. It seems like right after I had my 2nd child, my body refused to cooperate (or I kept eating everything in sight, whichever reality you want to believe is fine). I have been following a Keto way of eating off and on for over 4 years. I have lost over 80 pounds but somehow I still yo-yo with the same 25- 30 extra pounds each year. I am determined to get them off and keep them off.
Since the only way, I will truly ever be able to stay on my Keto way of eating long term is by converting my entire family. Yesterday, I decided to slowly introduce my family to more sugar-free, grain-free recipes. I wanted to try something tasty and simple so I started with breakfast.
Breakfast is one of the easiest meals to start transitioning to Keto. There are so many options. Can you guess what I made for them? *Spoiler Alert – It’s in the title of the post. LOL
Yes. I made them my version of Keto Waffles.
These keto waffles are so versatile. These waffles can be made in the waffle maker, or if you don’t have one, can be cooked in the frying pan, just like a pancake.
Depending on how crispy you like these waffles, I suggest cooking for 4-7 mins depending on the heat of your waffle iron. If they are crispy, then they are easier to pick up.
Add some cinnamon or ginger if you like different spices. Make an extra batch and use the keto waffles cold as a ‘sandwich’.
Cut each waffle in half, spread each half with cream cheese and add some berries inside as the filling. Or how about cutting them into individual pieces, toast them and use with a lowcarb ice cream.
It was a success. I topped them with sugar-free maple pecan syrup and a swerve sweetened cream cheese drizzle. My kids mentioned that the waffles tasted different but they eat them with no complaints. With my very opinionated children, that’s a win in my book. I am determined to get my entire family to live a sugar-free lifestyle. I know this will be a very slow and gradual change for my sugar loving kids but I have hubby 1/2 way on the bandwagon. Once he is fully converted, it will make the family transition just that much smoother.

Keto Waffles
Ingredients
- 4 oz Cream Cheese
- 1 cup Almond Flour
- 4 Eggs
- 2 tbsp Almond Milk
- 1 tbsp Sugar-Free Sweetener I use Swerve
- 1 tbsp Melted Butter
- 2 tsp Baking Powder
- 1 tsp Vanilla Extract
- 1 tsp Maple Flavoring
- 1/4 tsp Cinnamon
Instructions

Add all ingredients to blender and mix.

Pour into Waffle Maker for 5-7 minutes.

Top with sugar-free syrup or sugar-free preserves. Enjoy
