Bakery-Style Pumpkin Chocolate Chip Cookies

So I’m sure if you have read any of my previous blog posts, you are well aware of my love for all things Fall. Mainly, because fall is the time of year that I do the most baking. Over the last few weeks, I have created a ton of recipes with apples. Some of those recipes have made it to the blog so feel free to check them out here:

Well, this week I have moved on from recipes with apples to baking with pumpkins. You can call us basic but my family loves all things pumpkin. So I decided to make them some bakery style pumpkin chocolate chip cookies.

This is such a simple recipe. I have all the ingredients in my pantry.

Pumpkin Chocolate Chip Cookies

Simple Round-Up of Ingredients

To get started you simply need to preheat your oven to 350. Spray your baking sheets with a nonstick spray or grab your silicone baking mat.

Then is a large bowl mix flour, soda, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, beat your butter and sugar, then add pumpkin, egg, and vanilla, and mix well. Then beat in flour mixture gradually.

Then gently fold in your chocolate chips. Use a cookie scoop to drop them onto a baking sheet (Honestly, I eyeballed the cookies so they weren’t so uniformed.) Bake 15-18 minutes or until edges are firm.

Allow time to cool slightly before biting into one. Trust me, you don’t want to burn your tongue.

Ingredients

  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup butter, softened
  • 1 cup pumpkin puree
  • 1 cup chocolate chips
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350. Spray baking sheets with nonstick spray.
  2. Mix flour, soda, baking powder, cinnamon, nutmeg, and salt.
  3. Beat butter and sugar in separate bowl, then add pumpkin, egg, and vanilla, and mix well. 
  4. Beat in flour mixture gradually.

  5. Slowly fold in chocolate chips. 

  6. Use a cookie scoop to drop them onto the baking sheet. 

  7. Bake 16-18 minutes or until edges are firm.

Serving size and baking times will vary based on the size of cookie
