Glazed Apple Cider Doughnuts {Baked}

Ingredients

  • 2 cups all purpose flour
  • 1 cup white sugar
  • 1/2 cup apple cider
  • 1/4 cup milk
  • 2 eggs
  • 1 tbsp butter, melted
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp apple pie spice

Glaze

  • 1 cup apple cider
  • 1 cup brown sugar
  • 1/4 cup milk
  • 1 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease a doughnut pan.

  2. In a large bowl, mix flour, sugar, baking powder, apple pie spice, and salt. Stir in cider, milk, eggs, vanilla, and melted butter. Beat together until well blended.

  3. Fill each doughnut cup ¾ full. 

  4. Bake 8 to 10 minutes until doughnuts spring back when touched. Allow cooling slightly before removing from pan.

Glaze

  1. In a medium pan, heat the apple cider until reduced by half. 

  2. Add in brown sugar and milk over medium heat until it comes to a boil. Boil for 3-4 minutes, then remove from the heat and stir in the butter until melted.

  3. Whisk in the powdered sugar until smooth.

  4. Working quickly, dip the tops of each donut in the glaze before inverting onto a wire cooling rack.

  5. If the glaze firms up too quickly, simply reheat over low on the stove until liquid, then remove from the heat and continue glazing.
